Product Preparation Method
- Remove the portugeuse roll from the box from
- Pack the portugeuse roll on a floured perforated baguette pan with the cut side down
- Cover the the portugeuse roll with a plastic sheet and defrost for 60min
- After defrost place in the proover for 60min at 40degrees celcius and 80% humidity
- After 30 min turnnthe portugeuse roll with the cut side up and with the flour
- Proof for the remaining 30 min
- Preheat oven to 220degrees celcius
- Bake the portuguese rolls at 190degrees celcius for +-20min with steam and closed damper
- Open the damper the last 5 min of baking to escape the last of the steam in the baking chamber
- Product is ready
