Paletta - A quick-setting glaze with a natural taste. Freeze-thaw stable, stands fruity acids, re-heatable. Increases the shelf-life of sweet dough and fresh fruit decoration when coated.
USE: Perfect for glazing tarts, cheesecakes or Danish pastry.
METHOD: Use 1 litre Paletta to 500g water. Heat up to 80°C - ready to use. Apply to product while hot.

Paletta Miroir - A gel that can be used directly as a coating or for piping decorations on confectionery products, glazing fruit on tarts and cheesecakes or Danish pastries, diluted 1:3 with water and used as a syrup for Lamingtons.

Gamma 500 - Concentrated all-purpose bread and roll improver.
METHOD: Use between 0.3% - 0.5% to flour weight.
Zeesan Neutral V - A versatile instant powdered mousse mix, suitable for filling and decoration.
METHOD: Mix together 200g Zeesan Neutral V, 250g water (25°C), 500g Wonder Créme/Whip plus any flavourant of your choice.
Bianca Meringue - Special egg-white powder. Produces a beautiful white meringue with a stable, firm texture and delicious flavour.
METHOD: Mix 300g Bianca, 700g sugar and 1000g water. Whip up this base and add 2000g sugar at the end.
Over Powder ZK - Powdered egg-wash substitute which produces an excellent sheen and golden brown crust colour.
USE: Suitable for all sweet dough products, eg. croissants, danish and pies.
METHOD: Mix 200g Ovex and 800g water to a smooth paste and wait minimum 30 minutes before using.
